Pumpkin Spice Latte Overnight Oats

It’s fall and that means it’s time to start putting pumpkin in pretty much everything possible. So we’re kicking off pumpkin season with these cute little pumpkin spice latte overnight oats. Packed nutrition and a touch of caffeine these little guys make the BEST grab and go breakfast to get your day started.

These overnight oats are gluten-free, vegan and refined sugar-free to help keep you feeling your best without sacrificing flavor. The addition of the pumpkin puree gives these overnight oats an extra thick and creamy consistency. It’s like pumpkin pie and coffee for breakfast (but much healthier) all in one easy to go jar. AND It’s as easy to make as it is to eat, just mix all the ingredients in one big bowl then divide into separate containers and you are good to go. Literally.

Pumpkin Spice Latte Overnight Oats

Prep Time 15 minutes
Resting time 30 minutes
Servings 4


  • 2 cups gluten-free rolled oats
  • 2 tbs chia seeds
  • 1/4 tsp salt
  • 1 cup strong brewed coffee
  • 1 cup pumpkin puree
  • 1 cup unsweetened almond milk or milk of choice
  • 1/4 cup pure maple syrup
  • 1 tbs pumpkin spice

Pumpkin spice

  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 clove


  • Mix all ingredients together in one large bowl. Let sit for about 5 minute to let some of the liquid absorb then divide into 4 individual containers. Let rest in fridge for at least 30 minutes before serving. Can be kept in fridge for up to 7 days.
