Orange and Apple Spiced Cranberry Sauce

Cranberry sauce has always been one of my favorite parts of Thanksgiving. When we were kids, my mom would always make it the night before and I would love to watch the cranberries burst and pop in the pan until they cooked down to a delicious thick sauce. We used to make just a simple cranberry sauce but somewhere over the years we started adding other flavors. Our family sauce is now infused with orange, apple and cinnamon. It is still quick and easy and even now, I think it’s fun to watch the cranberries pop! If you have never made homemade cranberry sauce, then this is a must try.…

    Mint Pesto Pasta

I first made this mint pesto pasta this summer. It was a weeknight, we were low on groceries and I didn’t have a plan for dinner. Whenever we are low on groceries, my go-to dinner is often something involving eggs or pasta. That night, I decided to go with pasta. I knew I had some fresh mint growing in the garden so I decided to make it into a pesto. In this mint pesto pasta, blistered grape tomatoes are tossed with Kalamata olives and canned cannellini beans for an easy weeknight dinner. Best part is, it comes together in 30 minutes or less. This is one of those recipes that…

    Spiced Balsamic Reduction

Balsamic reduction is very nostalgic to me. It immediately takes me back to the summer I was first introduced to this slightly sweetened and thickened sauce. Drizzled over peppery arugula, fresh tomatoes and mozzarella, I think I ate it almost every day that summer. In this version, I have simply added some warm, aromatic spices for a completely different experience. This reduction sauce goes good on everything and I mean EVERYTHING. Chicken, fish, beef and salads are just the beginning. It’s even amazing on a vanilla ice cream. Add a little drizzle of this and pinch of kosher salt to a scoop of vanilla ice cream–SO GOOD. Drizzle over goat…

    Simple Granola

I started making my own granola a few years back when we had phase where we were going through A LOT of granola in our house. It was a daily thing for us; we would eat it for breakfast, snacks or even as a dessert when we were craving something sweet after dinner. When I realized how much we were going though (at least a bag of granola per week) I decided to try and come up with my own recipe. I wasn’t totally satisfied with what my options were in the store. Healthier store bought granola is expensive (and by healthier I mean just less sugar, than cheaper granola,…
